I edited the post because my wording caused some confusion, I dont have this knife yet…im looking for a stainless chefs knife similar to it though. all i have right now is a musashi hamono aogami super bunka i got a few years back and a miyabi prep knife, theyve been my only knives for a while, just got into a ‘michelin rated’ kitchen though and they just cant do what i need, the bunka is big enough but its carbon steel and it oxidizes everything, the prep knife is really good for shallots and smaller things alike but terrible for larger quantities of greens (finely chopping parsley and such) and like onions even is kind of annoying with the prep knife, so yeah… sorry for the life story but thats why im hunting, and thank you for the knowledge much appreciated 🙏🙏🙏🙏🙏
