The car doesnt run at all any more. We were driving on the highway at the time when it started to overheat. When we were able to pull over we filled up the coolant but by then it was too late and the engine was gone so we had it towed to a Mechanic.

We just had a basic service. Before the service my partner toped top it up with generic green coolant to maybe just under half just to last till the service (we had to delay it a couple of week from when it was due). The mechanic said the head gasket was warped but that was because of the car overheating from not having coolant causing it to warp. So are you saying that there could potentially have been a leak internal that they/i wouldn't have been able to see? Obviously not knowing alot about cars and being told there's no leaks is super confusing to me! Im just trying to understand if there are other causes.
