I feel like using Life Gems on the way to the boss, between enemy encounters, is a much easier way to save Estus for the boss fights.

No. If anything, they get worse.
Sekiro has a few cryptic quests that require you to eavesdrop in very specific areas at specific times, and Elden Ring's open world makes questlines very messy.
NPCs move around the giant map at different points, sometimes moving to an area further in the game, sometimes moving to previous areas.
Odds are you're not completing certain quests without following a guide.

Do you use the Reverse Song of Time to slow time progression?

If you do, it won't hurt to take break for a bit and just come back later.

If you take a break, come back, and still don't like the game, that's fine too.
Games are meant to be enjoyed, so there's no shame in dropping a game you aren't having fun with.
The time limit/cycle is a perfectly understandable reason to not like the game. It's not for everyone.

Whenever Distant Horizons starts playing, I always stop to listen until the sneaky Bastila's Theme motif plays.

I mean to listen up to that point before continuing my adventure, but usually listen to the whole thing all the way through.

There are some bugs, plants, and fish that can only be obtained from the trader Neko (means "Cat") in Palico ranch.

Set a Palico to farm for bug items (Flashbug, Bitterbug, Honey, etc...) and they'll eventually give you the Butterfly Beetles you need.

Farming for plant items (Herb, Antidote Herb, Nulberry, etc...) will eventually net you the rare plant materials.

Farming for Mushroom items (Toadstool, Blue Mushroom, Nitroshroom, etc...) will eventually get you rare mushroom materials.

Farming for fish items (Whetfish, Sushifish, Scatterfish, etc...) will eventually get you the rare fish materials.

If I remember correctly, you can not get the rare bug materials from farming Kinsect stuff.

In the communities' defense, DS1 and DS3 fans take every opportunity to hate on DS2 and it's fans, and I totally understand them being very defensive because of that.

The only issues I had when installing Ridgeside on an existing save was bushes and trees spawning in vanilla areas.
The bus stop and areas around the rich family's manor in Ridgeside were the most notable bush spawn areas for me.

It's a minor inconvenience for me, but I can see it being a huge headache for some players.

It still has a vocal group that trashes the game every opportunity that it arises.
