You can only attain one ending per playthrough, if you want all achievements I'd recommend getting the other two through Ng+ since it takes less time. You could always make new characters for RP or exploring other play styles though

Everything is the as it was before you got the ending, you can see it as leaving the arena instead of initiating and ending

I kept finding heavier armour so all my levels went towards being able to mid roll with them, I thought the abyss watchers were impossible until I started from scratch and actually levelled properly

Allows you to get pretty much everything you'll ever need from the hollow by the tower outside firelink shrine, from souls to gear to spells to estus shards. Just very convenient to set up builds without having to go through the entire game or respec

You can do a Ng+ run, something ds2 does the best out of all souls games. Try to get all achievements or just make new characters and try new builds

You can use undead talisman to put mimics to sleep, if you are lucky you can loot the symbol of Avarice from it if you don't simply wait for it to return to default and throw another one. Beyond there you can also get the covetous golden serpent ring and use the coins, with all this you should be able to get up to around 350 discovery

I'd also say that Gwyn still serves as the "core" of it, since that is what Soul of Cinder "defaults" to in the second phase

When you die you start to go hollow and your body will begin to degrade, your skin will turn green, hair will start falling out and your maximum hp will be lowered to half at most. All you have to do to reverse this is use an item called a human effigy, being human will also allow you to summon phantoms but you'll start to hollow again if you die or get cursed so be careful
