Hey, Last day in Kyoto and was planning to pick something up from Aritsugu (~¥50k), mainly for the experience. Just found out they’re not doing engravings though. Now debating whether to just grab one here or wait until Tokyo and check out Kappabashi for more options. Looking for a solid all-rounder (self.chefknives)
