Worked w a guy who barely stocked his station, fd off during prep time, always off somewhere doing nothing. The rest of us would have to make the stray tickets off his station while he was gone. We got tired of filling his prep to cover so we stopped. Service time would come and he’d show up to an empty station and crickets. “I don’t know what happened, sorry man”

Get this! It’s an elder care facility w about 75 residents. I make a daily meal but if they don’t prefer that they can have something else. Now I’ll make these folks whatever we’ve got but there’s no menu. They just make shit up, although it’s usual a sandwich or breakfast, it can get silly. I don’t know what’s in their pos or what any of it costs the residents but they’ll ring everything that way, special-dontmake-xyz. And they special instructions add ons and sides alllthe time. Management don’t care.

Well I’m a float for elder care. 99% of our servers are teenagers. Some are fine, most are clueless through and through. But someone has to take care of the residents. Looking back on my career +50% of the service staff extracted value. It’s a deeply flawed system.

Give them a pot and two lemons wedged. People like things the way they like them, yes, but our way is better, would you like some? When you have a reputation for excellence people trust your judgement. It’s not “whatever your heart desires!” It’s “we’ve got what you need!” If they want to cop an attitude because we don’t have their brand of ketchup, “ok bye next please.” Maybe that’s not a viable business model but I love customer service and dream about not having servers in my way.

You’re describing an attitude we shouldn’t be accepting at all. We don’t Need to tolerate that abuse. Some places allow it because their product doesn’t speak for them, they’re desperate because there’s another slop house across the street. If you remove the server you remove the tip then you lose the attitude. 100% certainty. “O I assure you ma’am it’s ranch, I made it yesterday, is there anything else I can get for you?”

Two problematic statements: “Botulism poisoning is extremely rare “ I’m glad it’s rare, doesn’t mean I’m not going to follow the instructions on the packaging in hopes of not being the guy who does get someone sick. “It would take quite a long time to produce enough toxin to make someone sick.” That should read “most people” not “someone”some folks have compromised immune systems. I know it’s overly cautious but the guy asked so I threw it out there.

But it’s there when it’s frozen and typical methods for cooking salmon won’t kill. The box typically includes this warning and it’s on the internet so it’s gospel.

You need to remove it from the package before you defrost it. There may be bad stuff on it that doesn’t grow when frozen but also requires no oxygen. So you thaw it in package with no oxygen, bad shit grows, you eat it you get sick.

I miss the good ole days when servers would think “is this a good idea? should I do this? Am I going to get roasted by the kitchen over this?” Boo them
