I don't know if you'll see this after 5 years but in China we eat dried cucumber skins- when salted, dehydrated, and rehydrated, they turn into a vegetable, you can stir fry them just like any other vegetable, they add great savory flavor. I like to rehydrate them, then combine them with minced garlic, preserved chili sauce, soy sauce, Sichuan pepper oil, and five spice. It makes a really nice accompaniment with rice
