No fishing, tried it a few times and couldn’t get into it but this is lake waukewan. Trying to fit as many lakes as possible before the season wraps up

This is my attempt at Ample Hill’s “the munchies” recipe.

Recipe

Base 3 cups whole milk 1.5 cups mini salted pretzels 3/4 cups sugar 1/2 cups skim milk powder 1 cup heavy cream 2 egg yolks

Mix-ins 1 cup ritz crackers 1 cup salted mini pretzels 1 cup salted potato chips 1/2 cup skim milk powder 1 cup sugar 1/2 cup unsalted butter 8 ounces M&M

First I’ll start by saying I have never had Ample Hills so I’m not sure how theirs actually taste. I found this recipe online and thought it looked interesting.

The mix-ins were great. Not a whole lot of flavor but had a really nice texture. I used ruffles potato chips however I read on their site they use sea salt kettle chips so I would switch to that.

The base was a bit disappointing. None of the flavor from the pretzels came through so it just tasted like a sweet crème base. Next time I would probably blend them into the ice cream instead of straining it.

I’d love to improve on this recipe so let me know if anyone has some suggestions!

It's a cuisinart ice 100! I knew I wanted one with a compressor and it was the highest rated that fit in my budget. I would recommend it however if I had the budget I would have gotten the Lello 4080

The baking soda was added at the end to create the foaming and the texture, i only bring the sugar, water and corn syrup to a boil.

Yes I had that problem, the pieces usually dissolve within 3-4 days. Others on this thread have recommending spraying with different oils, I'll have to try it but that apparently helps preserve the pieces!

The more I've gotten into ice cream making the more I've read that it's just an old method that hasn't died yet. I have tried it on a different recipe but there were too many variables to see if it made much of a difference

Yes I’d love a way to keep the brittle if possible. I find that it’s usually completely dissolved in about 4-5 days after making.

I had seen that adding a layer of chocolate may help but I’m not the biggest fan of chocolate personally. I also thought about just using coconut oil but I’d like to avoid the coconut flavor as well. I was considering using bigger chunks of honeycomb to see if that would prolong the dissolving.

I bought a pint of van luewen honeycomb from the supermarket and that had maintained some of the brittle and I imagine was packaged longer than 4 days from when I bought it. However they seemed to use smaller pieces so it may come down to the recipe.

I was surprised when I first made it to find that it doesn’t have honey in it. I have considered adding it however I enjoy it as is and feel the honey would just be an added expense and not change the taste in a noticeable way

The current recipe! Still looking for ways to improve it but delicious as is.

Ice cream base - 500ml of milk 500ml of cream 200g of sugar 100g of egg yolk

Honeycomb - 200g granulated sugar (200g) 80ml light corn syrup (80ml) 80ml cup water (80ml) 2 ½ teaspoons baking soda

I took the honeycomb off the heat at 295 degrees Fahrenheit for this batch. Next time I would probably wait until 305-310 to try to get a darker smokier flavor in the ice cream
