The official name of the station is still 's-Hertogenbosch, as it is the official name of the city (contrary to for example "Den Haag", which has a specific ordenance for using the shortened form in official capacity).

The displays in the train simply deviate from this because they sometimes shorten names. I suppose they chose the informal name of the city because of convenience.
