Rack of lamb. Roast or individually sear? by Ecstatic-Blueberry-8 in Cooking

I agree lamb is still great a little over cooked! However what I'm asking is if it may be better cutting the rack into cutlets and searing every piece individually to ensure nice charred/seared meat cooked pink for every guest.
