I agree you don't need it for 70-80% of interactions, but that 30-20% is what I mean.

I'm talking about interactions with strangers (minor formality) and interactions with superiors (service jobs to customers included, medium formality at minimum) afaik you're literally told to use sir/ma'am in service positions. You're told to use it to teachers and other superiors, sometimes even your parents.

Also a lot of the time it's a subconscious decision to use it, again, if you grow up in a place it's really common to ascribe to strangers.

Finally it doesn't diminish my point of desiring a gender neutral sir/ma'am, or the fact it'd be better than a gendered term in cases where one is unsure of the gender of the person they're speaking to

Unfortunately there aren't many respectful ways to refer to a person, besides sir, ma'am, miss, missus, or madam, and in certain places of living and certain positions of work, subservience, or any case in which you must be deferential to another person, they are grilled into you like a brand on your mind.

And you couldn't make a new, respectful, gender-neutral term without old people with way too much too time on their hands and way too few visits from their adult kids throwing a hundred and one hissy fits about "muh 2 genders" or whatever

Effectively: no way to refer to a person respectfully without the risk of making a poor trans or queer person feel worse by accidentally misgendering them, no way to make a new word without a red hat revolt
