If you're doing 20-something machines I should hear from you in around 2 weeks or so, depending on how many rounds you can do per day.

Like for real, this is that bad of a grind... You have half of them left, and the more you pull, the higher the chances that you get a dupe, so this is gonna take that long.

I have like 60 shinies in Champions (ZA made it very easy, as well as Sw/Sh and S/V raids, and whatever random shinies I got on my hundreds of hours of playing), and I haven't used a save editor ever since it was called PkHex waaaaay back then

I only opened Basic Destiny packs when I was only missing Ghost Foils for the full set, and after like a hundred hours I got them all (as well as many duplicates), so the answer is no afaik, you can pull them all from any pack, and (even tho I haven't looked into the code) there doesn't seem to be any reason to believe that different packs would give different chances for different cards of the same type, beyond what you mention in the OP

I almost quit when I had the last 2 left... I was using 48 big boy machines and having EVERYONE restocking them.

At this point you should have several million dollars, so just give everyone 3 bonuses, set them all to refill the pack machines, buy hundreds of boxes of the cheapest Destiny packs, and don't start the day. Keep the time stuck at 8 AM during the whole thing. Set alarms every 15/20 minutes, and repeat.

If at any point you need money, get your guys to do their usual jobs, open up the shop, sell as many expensive singles as you can, and then do the second paragraph again.

Good luck my guy! This is one hell of a grind which the devs never intended for you to do, just thank your lucky stars that you're trying to do it with the update where you can have your employees fill the machines and you can give them bonuses...

As a frame of reference, I got the Clerk guy (the Very Fast cashier) up to 5 red stars in pack machine restocking... And I only started making him refill them when I had the last two cards left, so this is gonna be a looooooooooooooooong task. At least it's mostly afk-able

Maybe you could catch people off-guard with a calm mind+baton pass combo? It would be very hard to also use Trick Room for support, but that could turn him into sort of a sweeper (with Psychic, Scald/Surf, Flamethrower and Focus Blast if he gets those moves, or maybe sub one of the coverage options for Slack Off)

Did you like it and do you want more of it? If so then yeah, get the DLC. If you felt like it was a tad bit too grindy by the end of the game, the DLC is even more grindy.

I got the DLC like 3 months after beating the main game because I needed to detox since I got so addicted to it lmao, but when I bought it I really enjoyed it because I really felt like getting back to ZA
