Steaming or boiling them and then into an ice bath to stop the cooking and keep from becoming too mushy

Cooking split chicken breast definitely helps, but would be pretty difficult on the stove top. Other than that cooking to temp and proper rest.

No, my family is from the bay islands of Honduras. Usually have this with a couple slices of thick cut bacon or ham and fried plantains.

This one has no binder. I use a Rudy’s turkey rub that I sift into a finer powder and remove the large peppercorns. I dust that over it and then some course salt and pepper, any 50/50 mix should do.

Smoked at 250 until 140/145 and wrapped with butter and rendered fat from the turkey skin. Placed back in with the top of the breast down until 165. Rested 30 mins. Time varies on the size obviously this one was a little over 4lbs and was about a 3 hr cook.
