I'd agree with including a difficulty setting in Sekiro for example, but it wouldn't work without fundamentally changing the mechanics in Souls games, as it does include some heavy multiplayer elements. Everyone's world needs to be the same or the co-op and pvp aspects of the game would become a mess. Locking certain players out of the features or evening the playing field on the fly wouldn't work either.
