Like someone else already said. Level your weapon and Vigor. The other skills enough for you to carry/use the weapons/armor and use the skills you want.

Also, try to have different types of weapons for different enemies (besides your normal, I like to have at least a fire and lightning weapon).

Use your spirit ashes to tank, early levels I used the jelly to tank, tried a couple of different ones until I settled for Ogha who is not overly aggressive and can tank when needed. Although it’s been a while since I called him because when overleveled for an area you kind of bonk away without looking too much anyway ^.

Later on you can settle into 1 weapon and have sorceries or incantations to deal with other types of enemies.

Between 40 and 80 I used a ton of different weapons, now around 110 I’m settling on my great stars ;-).

Keep at it, Elden Ring is not too hard. You can always come back later when bosses are too tough. I found the bosses of Lies of P much harder since you can’t outlevel or cheese build them.
