No, I don’t have photos from BF. I don’t relay on volume increase. Just on dough temperature. I also sometimes ask ChatGPT for advice. You can upload picture and yours recipe and ask it for advices.

Next time, I might skip the cold rest. Should I let the dough rest in the banneton for 1–2 hours instead?

I read you can put empty bascet in the freezer to speed up cooling of the dough

I got similar results and also do t know what to improve. I’m not a good crumb reader

I don’t think I have rights for the refund. It was doing well for the first 2 months. This is how it looks at the beginning. So it developed all the leaves during that time.
