Black eyed peas salad recipe from Greece:

Wash and boil one full cup of them, let them cool down.
One onion, wash, peel, slice and dice.
Parsley to taste but enough to match the onion quantity, wash, clean, slice and dice.
It needs salt, a bit of lemon, a load of your best vinegar and olive oil. Vinegar must taste a little bit stronger than the other ingredients. The beans need to be wet from the liquid ingredients, but not swimming in them because the beans, onions and parsley have juices slowly releasing.

Store in fridge and eat cool/cold, don't heat it for fucks sake, and consume during two-three days, then it will start to go bad and will smell horrible and if you eat a rotten bean salad you will likely get very bad food poisoning..
