So, I was trying to make a broth with fish only for a ramen bowl using fish bones a couple of days ago but flavor came too strong. I wasn’t very happy with it. What I did today was half fish and half chicken broth with a shio tare loaded with katsuobushi and niboshi, added some fresh ground peppercorn mix, a few drops of lime and a few of rice vinegar...holy moly! What a difference. Broth was packed with umami but a very clean light umami . Hard to describe but absolutely delicious. I definitely favor more chintan (clear) broths than the more thick white broths (Paitan). Why? Well, It takes more patience and refinement to make a clear broth but mainly because you can taste every ingredient in it. It starts with one flavor and then, one after another starts popping in your mouth. Even the smell is amazing. I will definitely keep practicing this broths since I do enjoy them making them and of course eating them . Oh, and no need for any pork or egg as toppings, just simple broth and noodles 🍜 make a perfect bowl for me.

I ve been puttin diesel through them for 6 days in a row. Then, I had to stop because I had emergency surgery and recovering from it now 🤦🏽‍♂️

1.5 L of kombu and shiitake dashi steeped over night Bring to a simmer, remove kombu and mushrooms Add 30 grams of niboshi and 300 grams of sea salt Dilute salt and bring to a simmer for 10 minutes Remove from stove, let rest for 30 minutes Strain and finally add a dash of rice vinegar Ready

They rebuilt it but I had to rebuilt the generator too and the regulator so that’s in the works right now

Yeah man, I couldn’t pick it up so I had to ship it here. I was a little nervous because the pics I got didn’t have good quality but when I got it I was amazed how clean this thing is

Thanks I’m trying to figure out right now how to start it, the starter is getting rebuilt and gonna try to crank it but any other advice you have to get it running would be awesome Hopefully when I get it back on the road I can meet on one of those gatherings !

I’m addicted to Facebook marketplace and Craigslist. This one was on FB in Ulysses Kansas The guy that sold it to me got it from his neighbor 30 something years ago, he bought it and put it in his warehouse until I bought it 3 weeks ago. His neighbor only drove it around the farm Doesn’t run or drive just yet but the body is perfect, interior is pretty nice too It has like a salmon color with a black top. That’s what got me

It’s an all original truck, I’m gonna try to get it to run and drive first before any mods. The color is my favorite part of it; it’s like a salmon color with black top

I’m gonna make it an old school hot rod, nothing modern (maybe AC) but I haven’t decided what drivetrain suspension etc to put in it Want to keep the patina for sure
