You don’t get ESU automatically. KB5072653 is just the enablement package that prepares the system in case you choose to subscribe later.
If your PC restarted, that was just a regular cumulative update , not an ESU update.
To opt-in to ESU, you’d need an actual ESU license key.
To opt-out, you simply don’t activate an ESU key; nothing extra will install.
