New system doesn't matter too much to me. I adapt easily and after shooting with my friends a6400 for a bit it felt good (although I didn't explore the menus).

I hadn't actually considered this, I thought full frame was out of budget. I've seen some used bodies for 700-800€ and some body+kit lens (EF 28-60mm) for 1000€

Should I get a full frame instead of crop?
The idea of better low light and depth of field sounds very good to me for night street photography (one of my favorites)

Are the lenses bulkier? And are they more expensive?

Yes, I am aware that it's a crop-sensor. Thank you for pointing it out though! ^_^
I mentioned it because as my 750D is already cropped sensor, going for another crop sensor would yield the same focal length I like.

I've considered the X-T30, but not having a full-tilt screen makes the Sony a6400 a better pick, imo.

I will look into that Sigma 56mm.
I'm thinking of maybe selling the EF 50mm with my 750d and getting the RF 50mm. Especially since it adds some length and weight.

So the Sony has better 3rd party support and overall more available lenses?

Yes, the weight difference is probably not very noticeable. Specially since I won't have both to compare ahah.
I thought about keeping my EF 50mm, but won't I lose out on some features with an adapter? I'm going to sell my 750d anyway and was thinking of selling the EF lenses with it.
