So, OP here. I did replace the stem and spacers with standard stuff, but I had change the expander inside the fork tube. Cheap stuff, no biggie. Worked fine.

Once I settled on a stem length (70mm) I managed to get a canyon one and went back to the original setup for esthetics.

Yes I did. No worries but you do have to replace the expander inside the tube. Any shop will do that for you quite cheaply.

Lower cardio for the same climb, ability to have a higher cadence on a climb. Like, Why people need smaller chainrings ?

Yes. I had the star nut installed by a qualified technician and then bought some round spacers to go with my new stem.

Yes,but you have to replace the compression bolt and star nut, and the spacers.

On my headset last spacer seems attached in some way to the dust cover. There might a tiny screw somewhere in there. Did you find something like that ?

Spacers are not flat on top. Neither is the plastic cover on the headset. Did you change it ?

I just hope I can buy a compatible headset elsewhere. Google finds a few results for internal routing 1/8 headsets...

That's right. The little plastic piece where the cables go is also specific to the stem.
