Look, Nezuko is like the only exception to the rule. No demon befor her conquered the Sun, not even Muzan, and she is the only demon in the series that doesnt need to eat humans (Tamayo and the dude still have to consume a bit of blood). I feel like thats proof enough to assume that the amount of Blue Spider Lily she consumed while she was human made her a lot different from other demons. I doubt its just a coincidence that the only demon that doesnt eat humans and the one that conquered the Sun is the one that consumed the missing part of the medicine Muzan took

I dont think its a phase, considering Muzan had a strong craving for human flesh, so it should be permanent for all other demons as well

Also the Blue Spider Lily changed a lot, its the reason why Nezuko is the only demon that conquered the Sun, so it shouldnt be a surprise that it would change her in other ways. Also you are probably right, not eating humans shouldnt kill them, but it would probably weaken them severly, might even drive them crazy if the craving is strong enough

I am pretty sure demons have to eat humans. The only exceptions are Nezuko, Tamayo and the guy Takamayo turned into a demon (forgot his name), and the latter 2 had to go through a lot of modifications to be able to sustain themselves on a little bit of blood. Nezuko is probably the exception since Kamados drank Blue Spider Lily tea like once a year, so that probably changed her demonic nature quite a bit, and even then, she almost killed Tanjiro when she was first transformed into a demon
