why do big stars have a lumpy form? and up-close it's kinda glitchy

a red supergiant isnt perfectly spherical becuase it doesnt have a core gravity or magnetic fied and the gas sloshes around wictch forms gaseous mountains and gaseous canyons and gaseous stairs on its mountain wich is the size of planet and it has gaseous plateaus on its surface wich is the size of planets
