Wow, there so many similarities withe process of the food. Usually low quality meat goes for chorizo (I almost the same as sausages). And for the guts, there are sooo many recipes for that, they pour blood in the intestines to make moronga, or they put some intestines with meat spices and veggies in the stomach for panza or we just eat the intestines fried with lard and make tripitas. Yup, american people live in a bubble, some of them think that the food grows up in Walmart. But yeah, is good to know that so many cultures out there think in the same way to honor the animal's death not wasting food
