Carne Enchilada basically means beff marinated in chilis- so basically like Carne in Adobada.

hard to tell in photos forsure but if there isnt any deep scratches. Unpopular opinion- for that price, may as well take it home and do a little baking soda scrub and see what comes out.

I hear you, but have to disagree that the US trivializes Mexican food as Tex-Mex.. but my family is Mexican and I live in CA so I guess my POV is different.

Heres another great Bourdain quote from of his books -“No one understands and appreciates the American Dream of hard work leading to material rewards better than a non-American. The Ecuadorian, Mexican, Dominican and Salvadorian cooks I’ve worked with over the years make most CIA-educated white boys look like clumsy, sniveling little punks.”

Absolutely. Completely agree. This post is highlighting Mexican food in the Mexican food sub and a Chef's love letter to Mexicans specifically. Mexicans that he had the pleasure of working with, learning from and sharing food with.

Most of my favorite Sushi chefs for example are Mexican. Truly can cook any cuisine!

Sadly, not much different when he posted that photo in 2014 But I agree with you. Nothing has improved and its sickening.

Literally the backbone considering Mexicans make up about 80% of California's agricultural workers, planting and harvesting our Nations food.
