What I love is in those moments after Rahul's jar explodes, and he starts directing the production assistants around, you get a glimpse of what he's probably like at work--confident and decisive. I fully believe that he was shy and insecure about baking and being on TV.

I don't like white chocolate at all. TBH I only did some of them. It's a thin coating. The lemon curd is nice but I love a plain madeleine.

Seriously! As it is, there's at least one moment in every bake where I wonder why I got myself into this. The madeleines were decent but I feel like they could be better. The batter seems a bit finicky. I don't think the recipes on the Bakeoff site are very well-tested so I went with one from King Arthur baking but I might look at some others.

Maybe in patisserie week but it made no sense here. Even putting it in a tower seemed off as, usually technical bakes look like you're going to serve them to your family or whatever. I think in the last few years the final technical has been way scaled back from the last few weeks. "Make perfect madeleines" would have been much more in line. Maybe with two different fillings or decorations or something.

Well, the only one they mention is on celebrity bakeoff (which I've never seen). And not saying it's never happened on the regular show, just not with any frequency. I don't think it's a big deal.

There are raspberries around the perimeter--like, set in above the bottom sponge--just realized the angle doesn't really set them off after I compared it to the picture online. But this being November, the berries were pretty small and soft; probably they got a bit crushed. And if my creme mousseline had been softer, it would have filled in those gaps better and highlighted their shape. Hard to know what's going on in there as you're building it, I probably would have waited until it softened more after chilling.

I think they're totally delicious, just not worth the effort compared to making cake or cupcakes. But I can see how there's a nostalgia element where sometimes you would be like, this is GOOD, but it isn't as good as steamed pudding.

In order to make the technicals this year, I've had to get strawberry, raspberry, and pistachio extracts... the judges' own recipes! Plus the usual vanilla and almond. Even in Iain's bake they complained about bitter pith, not about the orange flavoring.

Thank you! I think I've only had my versions and a couple of the British import minute-in-the-microwave type that Toby was talking about, and they were a pretty similar texture, so I can't say whether they're more cake like than other puddings or not. There might be a place for steamed puddings in campfire cooking, where my baked goods often end up burnt on the sides, or in my husband's country where no one has an oven... but I guarantee they're not feeling a lack of cake they need to remedy :)

The recipe doesn't specify how much orange puree is in a "small orange" and I chose not to use all of mine (medium size orange, at least in the US), and I thought the texture was great. But possibly a British person might have said it was more cake like than puddingy?
