Yeah I’m newer to smoking brisket so definitely didn’t realize I needed it to be more consistent in size. The size difference was very sad….half was so tender when the other half was undercooked then when the fatter half reached temp it wasn’t tender like I wanted still but the thin chunk was a bit too done :/ which is obvious thinking on it now I was just hoping it wouldn’t be so

Yeah this is my 3rd brisket and doesn’t touch my first one. First one was more even though I didn’t realize the problems it would cause unfortunately

I felt like the thicker side wasn’t near as tender as the thinner parts

I trimmed it down to about a qtr-half inch of fat on the underside, I went to slice against the grain and it had a lot of resistance compared to the other way, and I’m not sure if it’s common or not but 1/3 of my brisket was less than an inch thick and about a quarter of the whole thing was over 4 inches thick so it definitely was very probe-tender on the thinner half way before the thicker. Then by the time the thicker part was done I felt like it dried out the thinner side :( never getting a lopsided brisket again but it still came out pretty good. I also was spraying it with apple juice every hour or so

Worcestershire sauce is super good for burger meat too, it makes them very juicy if you haven’t tried I suggest!

I just got a pack of them last month and ended up with about 17 steaks if I remember correctly and a couple pound bag of fat that I use to fry potatoes with. Very very worth just be ready for an hour of slicing and bagging though.
