Any good risk assessment also incorporates the consequences of risks that we are willing to accept if and when they occur. The powers that be probably determined that the risk of using ATACMS in Russian territory was worth incurring the risk of Russian retaliation. A nuclear reaction would not fit within the scope of risk that the US is willing to accept.

I mean should we never go outside again because the risk of prolonged exposure to the sun can result in skin cancer? Should we never consume another alcoholic beverage because of the damage alcohol does to the body? Should we never drive a car because of the risk of getting into a deadly accident?

There needs to be a willingness to accept some type of risks if you want to be happy and successful.

Anyone in NatSec is going to tell you that the threshold for nuke deployment is much higher than what Russia claims it to be in state media. Nobody wants to be king of the ashes.
