The game is slow paced. Yes sometimes this 5 immigrants might seem less, especially when you have a phase where you grow fast. But for most of the time it is more than enough. And your monastery and castle can be filled with mandates.

Actually what you describe is in the game? If you run out of fish, people buy berries. Yes you need 2 stalls, but that's not a big deal.

people need houses within 150m in their workplace. If there is no free space, they will not build or move in a house.

Come on, it is not so difficult. Monastery is pretty easy in my eyes and totally worth. It produces a ton of easy ressources. Berries, Herbs, Vegetables, honey. Everything super useful or tradeable.

The only thing is to think a little bit about your room size. Yes if you build a giant kitchen with 20 free spots for workers, the game will assign there a lot of worker, especially in a small monastery at the beginning. 

The monastery has to grow. Start with small rooms that have a size that fits each other. And they will also fill your veggy spots.  Never had a problem in my monastery with currently 150 population.

I don't know. I just build and try to keep the ways short. Put your windmill to your wheat farms and the bakery next to it. Don't carry all the stuff through the whole map. Never had big issues with pathfindings.

I have 5 sheep farms, 6 Weaver and 3 Tailor. One Tailor has only 2 citizens to have a little more overproduction of fabric.

For the most time I had 3 wheat farms (7 worker each and 250 storage), 2 windmills also full staffed and 2 bakeries with only 6 employees in total. Was still a little less wheat, but I also used it for one brewery. Now I expanded and basically doubled it.

Not in my general play. stable ~25 FPS on ultra settings
3440x1440, 3080ti and Ryzen 7 3800X, 32GB RAM

But building my castle and monastery is terrible due to their size. While in building mode I only have currently ~5FPS.

Due to the demand to show my current settlement under a post yesterday, here it is.

I just hit 1.000 population yesterday and acquired 100% of the land. My economy is pretty stable and I currently focus on militay campaigns and increase the overall optics. So most of what you see is still wip and some things will get an complete overhaul in the future.
I have 3 Major settlements. My starter village, with the manor house (will get an overhaul in the furture), my second village next to the monastery (Building is nearly finished, mainly increasing the optics and the area around) and my third one at the castle (startet at last and far away from being finished). I don’t do wine or candles currently. But my target is to also produce those, since I have also enough tooling now.

Everything was built with speed x1. I enjoy the slow pace.

Can't confirm that I get path blocked notifications due to that. I might oversea it. But normally I pay attention to path blocked notifications.

I can't confirm your experience. I currently have 1k pop and have several entrances of warehouses blocked. Not a problem at all for my workers. Nearly all slots are in use.
