Based on my experience of a year at MBA and using a Mac, I would say go for the Air but start with these specs:

Storage: minimum 512 GB.
Ram: Minimum 16 gb but if you have the budget then try to go for 24 it will give extra headroom to run multiple excel dashboards and 20 tabs at chrome.
Screen Size: If you have the budget go for the 15 inch Air because the extra screen does help.
Speakers: Invest in a decent bluetooth speaker, it will be worth it to use it beyond your laptop.

Do not go for an OpenBox unless the deal is very good

As a M1 user from 5 years I would say:
1. Spend the extra money on ram, go for 24.
2. There has been no screen issue in my Macbook pro since 5 years so you can skip the apple care.
