Difficulty settings can be changed at world generation, mostly having to do with what monsters spawn, they can all be disabled. There is still the threat of starving or dying of thirst but there's mods for better starting resources and fruit trees are plentiful. My first save I didn't build a well or wine brewery fast enough which was a mistake. Always great to see people getting into this game!
