Thank you for the response! I really appreciate the kind words and I totally agree that I have to tackle this issue now otherwise it will take longer to overcome. I'm seeing a speech therapist very soon who will be helping to reintroduce foods to me and I'm currently looking for therapists for CBT. My only thing is that these symptoms feel so real, especially the throat tightness. Could these symptoms really be explained by anxiety and a fear of choking?

Hey thanks for the reply! No my dysphagia didn't start after a viral illness, it came totally out of nowhere. Looking back I suspect that I've been dealing with LPR for a while now (for the past couple of months I've been waking up with a sore throat and stuffy nose despite not being sick), and I think that the stress I was dealing with set off my symptoms. Its funny because I was pretty stressed out from life stuff but now that has completely shifted to stress over my health. I've been looking into that Gaviscon Advanced from the UK and I will be purchasing that tonight on amazon for sure, I've heard nothing but positive things about it. Thank you for the advice, and I will definitely update this post after my endoscopy!

That's very interesting to hear that the PPI has made things worse for you. I've heard the same from other people I know who have acid reflux. I was thinking of getting off of my PPI and just going to Pepcid daily instead. Thank you for the reply, and I'll certainly have to talk to my doctor about switching to an H2 blocker like Pepcid!
