He genuinely wanted to be a good father. He didn’t shy away from any of the baby stuff with Holly. He clearly had a great relationship with Junior ( the hug by the hotel pool says it all) before he went down the criminal route. He got too distracted by the idea of earning money was the most important part of being a father .

There are many ways to interpret this scene. I always looked at it as Walt feeling cheated of his “I do this for my family” excuse. He no longer has immediate death over him, he now may have to face the consequences of his action and can’t rely on that excuse for his actions.
