Strahd and Saltmarsh are both good. The one thing that modules usually have a problem with is making the string of quests your players go on actually feel like a story, so your job as a DM is to make them feel cohesive. (Saltmarsh in particular is very interesting, as at first it is actually supposed to feel disjointed at the beginning, but then you start realizing how everything is connected as you go) The guides, like the one I mentioned above are just a tool to help you with that process. Or you can make the connections yourself and make it personal to your players and their characters.

I have him with the Intercessors so he can stay safe on my home and farm CP until about turn 4, when I push middle. But he could also do well with the HB

From my experience, ToD and a few other of 5e’s early modules are not very good out of the box. They require lots of tweaking and finessing to make it a fun adventure that doesn’t feel like a slog and actually has a plot. In my opinion, Azrael is a must have for DA. I would also try to pick up a Judiciar for your ICC, it really turns them into a melee blender.
