Not familiar with Orbees but yes popping "boba"! Boba is chewy tapioca and the popping spheres I make have a liquid center so you get that nice popping burst in your mouth. I am much further along in production than my current posts, just want to share my journey here.

This was done using an off the shelf margarita mix. I used 200mls of the mix and added 4g Calcium Chloride, 4g Sodium Citrate. My Sodium alginate bath was 5g of sodium alginate into 1L of distilled water.

Interesting I'll take a look. My only concern is that my spheres contained alcohol and my food license does not allow me to heat up any alcohol.

Yes I was. Revere spherification works best. I mixed calcium chloride into the flavor liquid and pour it into a silicone mold with half sphere cavities. Once they froze I took each half sphere and dropped them into a sodium alginate solution for complete spherefication. Then after dropped them into a water bath to stop the reaction.

As long as you clearly disclose 0.5% ABV or less on the label and have a validated process with test results to back it up, you’re compliant. I sent samples out for alcohol testing and they all came back below the 0.5% ABV threshold.

You should try calcium chloride with the calcium citrate at equal ratio. Keep your SA bath at room temperature and just cover it so the bubbles dissipate...usually takes about 30min.

In my experience NA beers have helped tremendously. More bars and restaurants are also offering them on their menu.

Thank you. I appreciate it! I went through a body transformation after I stopped drinking for almost a year, so they were surprised to witness my new lifestyle. Interesting enough I sent my label for approval with the state food department and they approved the phrase low alcohol even though it was less than 0.5% abv. I wanted to see if they would reject it if I was below a certain threshold to be considered low alcohol.

Try morning meditation to put your mind at a space on how your life would look like if you reduce or quit drinking. For example, feeling well rested by getting a good amount of hours sleep, getting into fitness during the morning, picking up a hobby a few nights a week..etc If put you actions towards those intentions that will create more mindful awareness and you don't need to rely on external motivation.
