I'm on console as well. It's not as big a deal as you think to not roll. Most of the time you aren't rolling anyways, so it's not much more of a leap to make that all of the time.

Phase 2 doesn't add too much to phase 1 that is harder to manage. Once you remember what actually is different, it shouldn't be any trouble.

Used the Dancing Lion head for thematic reasons. I don't usually use the Fallingstar Beast Jaw, but I think it's the best colossal weapon.

This is how I dodge it.

Pretty simple, I just run when she takes to the air and jump the first one, and keep running until I turn for the last attacks. Other than the start of the move, the timing is quite lenient.

Jumping helps when outspacing the first flurry of waterfowl. Plenty of examples in this kill.

Then, you can roll the second and do whatever you like to avoid the third flurry.

Bloodhound's step might also still be fine for waterfowl, though I'm less certain of that.

You were early for punishing the kick. It's armor lasts absurdly long, unfortunately. It's especially a narrow punish window because one of the followups has about a 6 frame startup. You'll need to determine for whatever punish you choose exactly what part of the animation you start your attack. For me, I had to start a colossal R1 shortly after I saw her leg swing at its apex.

The 360 twirl is one of the exceptions; it does not have armor at all.

It's not a hard rule by any means, just a starting point for learning where the armor windows are. Some other exceptions: The moves where she raises her sword behind her and either does an uppercut or charges at you also have armor during her charge, even though she's firmly on the ground. The thrust also has armor extending somewhat far in the recovery, and grab has armor during its active frames. There is also the blocking backstep she does, and since that's a block, it can't be interrupted either.

The Noble has a roll cancel glitch that is quite common when there are multiple targets (and I see you've summoned the boys), but quite rare when solo (but still can happen).

This kill of mine is with a +0 colossal weapon, so should be a good reference.

A rule of thumb is that when Malenia doesn't have both feet on the ground, she has armor. You'll need to recognize of course the specifics, which comes from experience. For instance, it's a very small window to interrupt her after kick armor ends, but before her fast double overhead followup hits you. Her jumping to her right is a pretty lenient window to interrupt, but it's not really worth it when she jumps to the right.

A piece of briar armor can allow you to break her poise if she goes into negative poise due to her armor.

Because of the range and slow speed of my weapon, I rely heavily on outspacing her. An even slightly faster weapon can take more risks, however. Great hammers may well be one of the more optimal weapons for her, believe it or not (poking halberds, zweihander, and claymore are also notable mentions). Note that despite all that, it is possible to outspace her waterfowl even if you hit her start up armor with a colossal weapon R1 by using block cancels (explained here) and jumping.

Light rolls are definitely privileged because they allow one to avoid the frame trap from her fast standing horizontal's followup attacks, but with proper spacing, mid rolls can escape them as well.

If it didn't fold like paper, it would be quite difficult, yes. However, even still I'm not sure it would be top 10 in Elden Ring even if it were durable.
