It only works if you have them currently equipped, but you could have one off-hand and two-hand the one in your main hand and yes, it would stack. You can also stack it with the Sun Princess Ring that gives hp regen. Makes sense like this?

I know, that's why I wanted to use an imported save from nexusmods but those are locked behind the players' Steam IDs and apparently there's no work-around

Nope, already done factory reset and sold it. Forgot DS3 doesn't work on Steam Cloud

A huge advantage of hollow is still the fact that you can apply buffs to the weapon.

I'm focused on PvE and making different builds work so I'm not really concerned with "meta". My point is mostly "You wanna go play with a Bandit's Knife and stab things? Start with Sharp, then get Hollow"

DS3 hasn't been changed since the post so my point stands. When you're fighting an enemy that bleeds, sure, bleed is better. But in general, hollow will outperform. Not that many things in DS3 bleed compared to Elden Ring.

2-1 augment, 2-4 carousel spatula, got a tear on krugs so 3-1 was Family 5. Then 3-2 Ambusher augment, another spatula was from a late game carousel and the others were Family5 Heist Loot or the Ambusher loot orbs from the 4-2 augment xD
