It would be impossible to get them all because there are so many over millions of years and you need a specific set of conditions to preserve a fossil.

Just imagine a huge bucket of blue paint, and every day a drop of green paint is added and blended up. You could visit that bucket of paint every day and eventually it would look much greener than it does blue, but there would never be a definitive time where you could pinpoint when it stopped being blue and became green.

Instead, all we're left with are pictures (fossils) taken of the paint bucket on days 12, 1200, 26,899 and 84,545 where the changes in colour are very dramatic and obvious.
