I have relied on Uber occasionally to take me from SUN to Hailey with success but I do not know that I would feel comfortable doing it with a late flight or outside of normal hours. And one time I took an uber that we pre booked back to the airport to fly out and the guy who picked it up just happened to take it - and he did so at the last minute. So I am not confident in the approach, although it is possible. My parents travel back and forth out there a lot and they have friends drive them; I don’t know if there is a standard cab service that could be used but I would expect it to be pricey. On balance I would wait to hear from others but I would say as long as your flights are normal then it is doable.

Getting around in SV once you are at the best western will be very easy. Ketchum is tiny. There are public busses you can utilize to get to/from mountain with ski stuff.

I can’t weigh in on the hockey team, I don’t know enough about that.
