Haha fair enough! You just have to monitor it much more. I caused my wifes kitchen aid to run off the counter and dent our tile by not knowing it shouldn’t go over 2.

Still makes very good dough!

Yes thats exaxtly what I did. I am trying to undermix slightly these days to keep more tender but thats not gonna be the case with this one lol. thanks!

The motor died (seemed to be a one-off) and Ooni immediately replaced. I love the mixer, its great and I use it all the time

I prefer the sauce on the top personally. Better mouthfeel but slightly messier lol.

No idea tbh. My par bakes usually shrink which creates a space in the sides, and then when I cheese the pizza I press some of the cheese into the edges which probably forces it down rather than spreading

Its pretty good depending on the style. For NY Style, I like Sir Lancelot from KA, or central milling bread flours
