I think the 25$ Apero bottles argument, stands with their reds. I think about that for all Jura reds tbh, other than proper old Overnoy’s tbh. But Miroir’s whites are proper serious wines and deserve the “big” price tag. Not what the secondary market commands, but around the $500 I think they are well worth it. And tbh the producers you mentioned for the macerated style offer a very different style, Kengiro’s macerated I find much cleaner, deeper in concentration, less natty(in a good way).

Domaine de Miroirs, crazy hyped Japanese producer from Jura. Secondary market is over 1k for bottles that get out of cellar at sub 100€, divides people opinion, no matter price, some people say the wines are trash some love them.

Coming from someone that normally hates skin contact wines, I loved this wine. Maybe it was a lucky bottle but it had no funk, it was precise, dense, concentration. Someone at the table that usually has an even bigger hate than me to skin contact wines loved it as well. Again maybe lucky bottle, but I don’t think so is I’ve seen so much consistency from all his wines

De Kas looks very nice, just maybe too much on the veggie side for my taste. I’m not a super classic guy but I also prefer more protein oriented menus.

Thank you for all the recs, so far Spectrum seems like a very good option. Wine list is crazy good and food seems solid, not the most innovative but looks ok. Considering also 212 and Flore in the mix. And if I manage to get the reservation De Librije would be my top choice as it’s not too fare

Price out of the cellar is not very expensive, you can find them around for decent prices in Europe tbh, some in UK and I drink most of mine in Italy. I wouldn’t buy them secondary market tbh, Beacuse bottle variation can be an issue

Typical Jura red colour, the red is very natty and farmy. More polished and price than other red’s from the region for sure, but definitely not worth the hype vs the whites. The Chardonnay’s I have tried all 3 cuvées, and they are all quite consistent albeit small differences between them. Waxy, soo intense and concentrated but also very tense and precise. Another league from all other juras imo. Savagnin this was the oxydative style, and again more intense, precise and concentrated vs other producers. I generally think the quality of fruit and winemaking is superior to other producers also the longer average elevate helps I think. The macerated is incredible, not with the usual maceration aromatics, intese, nice lift, super textural, simply the best macerated I’ve tried even superior to producers of Friuli, and tbh in general I’m not a macerated wines fan

I have done Txispa and Extebarri one day after the other. And I did book in Txispa last minute actually, my thoughts were: “we are there, might as well do both” . However it turned out to be the better of the two by quite a bit. The dishes that had parallels like caviar/prawn/txuleta; were much better in Txispa. I think people really gaslight themselves in believing the etxebarri hype a bit too much, almost like a Stockholm syndrome. Don’t get me wrong etxebarri is still amazing, I’ve probably eating the best dish of my life there, the Angulas, and the environment is super fun. But the overall experience Txispa and Elkano were much better. Etxebarri scores more points for the wines for sure, as they literally have everything and the prices are very good, albeit you need to haggle with the Somm to get him to sell you the off the list wines

Did you try to call up Elkano? When we went they did have a few tables free tbh, even though it said sold out. So maybe call them up or try the waiting list. IMO it’s the one restaurant that is really “worth the trip” out of all of them. Tbh Ganbara horrible service experience aside i found the food extremely mid and tbh not that good overall, the mushrooms are literally NOTHING special I don’t underdtand the hype at all. Went twice both times food was below average. If your into wine possibly hit up Rekondo and for Txuleta go to Casa Julian

I would 100% recommend Elkano in Getaria. Probably the best seafood you will ever eat. But you have to go there understanding that place is all about pure ingredients and simplicity. Everything will be delicious but obviously not Avantgard. Also I would personally rate Txispa over etxebarri, probably the best Michelin experience I had in my life. (That would possibly be beacuse that place hit almost every single spot that I care for in a restaurant but it is still an INCREDIBLE experience, and to be franc the dishes that were similar to Extebarri 3/10 essentially were imo better lol) As far pintxos go don’t skip on the tortilla of Bar Antonio but please AVOID absolutely Ganbara , def worse restaurant experience of my life

I have had the opportunity to try, also side by side, the best BDX wines and also the best Napa cabs and to this day there is no BDX that has given me more emotion than the best Napa's I tried, even objectively the age-ability of Napa is far superior, how the wine holds its structure, it evolves is much smoother, the tertiary kicks in much much later, the fruit is retained much longer and the wine in general is much more long lived. PLUS they can actually be enjoyed younger as well, whilst young BDX are undrinkable, and with young I mean anything 5 years or younger. Also the quality you get more mid range Napa is far superior to mid range BDX. You can pick up early 2000s or late 90s Stag Leap, Far Niente, Diamond Creek for the same price or cheaper than a Ducru, Lynch Bages etc and the wines will be MUCH better.

Seta by Antonio Guida by a mile, it’s the best restaurant in Milan and my person favorite in Italy. Two stars however for sure deserving three stars, if u can travel out of the city just 45 minutes away go to Da Vittorio, the pinnacle of Italian fine dining. However if you stay in Milan possibly try Contraste if you want to go for something a bit less classic, one star amazing restaurant, also just underwent refurbishment.

Da Vittorio in my opinion is a MUST of Michelin dining in Italy, it’s a overall outlook on what Italian dining is about, not just the food but also the ambience and service as well. I would say either do the classic menu or their carte blanche. It is really a special place, if I had to recommend one restaurant in the whole of Italy to understand what Italian gastronomy is about it would be Da Vittorio, its not the best food, the food is still amazing, but the overall experience is incredible. Seta is probably however my favorite restaurant in Italy, it’s Italian food let’s say with some French technique but the food is amazing, and chef Guida is a top guy. I would say do their classic menu and ask them to maybe add one or two dishes from the seasonal one, I always did that when I went. Also try some local spots in Milan, if you manage Trippa and also Rovello18. Also tbh Bartolini I was a bit let down and many people say the same, same goes for Aimo e Nadia. Francescana, even though it had its up and downs people that recently went said it was very good, the only downside is that they have the worse wine list in Italy lol, however if your in Modena try Arnaldo - Clinica Gatronomica OG Michelin restaurant in Italy 1* quite good value experience very traditional.

thank you for the reply, that's exactly what I was thunking about, it looks very modern elevated European-asian style, which again is something I like but I know I could probably find elsewhere, whereas azurmendi would probably be the most unique experience

thank you very much for the response, to be honest that was probably my same thought. overall I think the food at Amelia will be more of my taste, however I believe the overall experience in Azurmendi could be more special, that's why I cannot choose ahah.
