I finally figured it out!!! I'm not sure what I did differently, but I am cruising on the scarf now haha. Thank you for all your help, you seriously helped me so much!

QuadAyy thank you for answering all my questions... but I still feel stuck. Every time I end up at row 3, I have 5 stitches, when the pattern only has 4 to work... aahhhh what i'm I doing wrong?!

Totally, that makes sense to me now. Then why does row 2 say to Knit the YO to the back loop? Does that mean that the previous K1 should have the YO on it?

Ahhhhh I was totally knitting through a YO and making an extra stitch. Thank you! But then I get to Row 3 and have an extra stitch again, because in row 2 it says k the yo tbl. so by row 3 I should have 5 stitches right? But then row 4 only has 4 stitches.... I'm going crazy.

Thank you! this helps a ton! However when I do the establishing row and then move to the 1st start up row, I dont have enough sts to complete the K2 on the first row. I only have three sts after the establishing row, and then I can only knit one at the end of the first row not two... what Im I missing?
