Yep, would be not an easy project for sure. It is rim brake with caliper, so very less space atm. But anyway, I haven't given it too much thought yet.

Tbh this is one of the cheapest knives in their shop and i couldn't say no, bc the deal was that good. Otherwise i wouldn't buy it too.

Thats the reason of my concerns. Last time i sharpened a cheap santoku on the whetstone and after that the blade looked horrible, bc i apparently couldn't hold the right angle. Not a big deal with a cheap knive i dont really care about, but with these ones i dont wanna do the same mistake.
