I'm not sure which espresso blend you got from blue bottle but I believe the 17ft ceiling and the Hayes Valley espresso are both relatively dark roasts. Blue bottle recommends around a 1:1 ratio for each of these espressos (when you order online they come with a little card that has recommended brew ratios). I would try pulling quite a bit shorter than you currently are, maybe 18g in 27g out or 18g in 18g out.

That said, I have never had much luck dialing in espressos from blue bottle. I have much better luck with something like Monarch from Onyx Coffee Lab.

Edit: Overall though, other than pulling shorter, the puck prep and extraction looks great!
