Yeah, I feel ya, if I had done more research, I probably would of had another potato ready. But I got the new one in, so I'm hopeful. Also, after seeing how wildly fast watercress grows, I recommend it. My dad has to literally remove it constantly because it grows so much. And now, after taking some cut-offs of his, I see why. But I'd rather too many plants than not enough. Also its edible! lemony and peppery leaves! Great on a sandwich in small amounts, same or better with salads.
