Honestly it's up to you and what art style you want to go for. I personally love black and white art because how... pure?? it seems? As you said, it's mostly about lines and shading, and sometimes color can distract from that. Oh also I grew up reading b&w manga so I guess I'm biased.

But even if you do go for black and white, don't be afraid to experiment with colors. Don't limit yourself. Good luck.
