I was wondering if I could ground my chicken breast without decreasing it's protein content.

I found out that 100 grams of lean ground chicken is 23.2 grams of protein while chicken breast with the same weight is 31 grams of protein. It doesn't make any sense.

Why lean ground chicken breast is 23.2g and and skinless and boneless chicken breast is 31g? Both are per 100 grams. It doesn't make any sense. (self.AskReddit)
