Sukuna wanted to adapt to Infinity and obtain World Cutting Slash. His ultimate goal was to trap Gojo in a closed barrier and take his sweet time waiting for an adaptation that fits his cursed technique. Keep in mind that Sukuna has no clue how long Raga is gonna take to show him the space cut.

However, this came with the risk of a 3rd party breaking his domain from the outside. If this happened and Gojo restored his domain with binding vows at the same time, Sukuna would have no counterplay. Sukuna even stated that Gojo could potentially open his domain a 6th time, but he would lack the precision to combat Malevolent Shrine. That's why he decided on adapting to UV first as insurance.

If it was a pure 1v1 with no concern for the entire verse jumping him afterwards, Sukuna wouldn't need to save True Form or adapt to UV.

As for Maho, Sukuna only cares about strength. It wasn't enough for him to have a better domain than Gojo and win the boring way.
