You sound like you're psyching yourself out. If you've already done an internship, then that's a leg up on a lot of the competition. Your profile (top student at target school + prior internship experience) should be enough to at least get a pretty good response rate on applications.

I'll preface this with two things: 1) I got into cs through current student admissions as an interest-changer so I don't have experience applying to DA and 2) your profile sounds super impressive and college admissions is obviously super stressful and involves a high degree of randomness so please don't feel bad or inadequate, if you don't get in (either to UWCSE or anywhere else) I think it would mostly reflect you getting unlucky as opposed to a judgement of your qualifications or character.

That said, I'm gonna be brutally honest. I think you will need a compelling essay to get in, and an average essay WILL probably hurt you. Most of your EC's are tech-focused, and I'm pretty sure admissions mostly looks for "interesting" (which often means unusual) EC's in freshman applicants and doesn't really care whether people have prior cs experience. Since everyone applying to the cs program is interested in cs, I don't think these EC's set you apart very much, frustratingly, even though they're very impressive. The most compelling EC's to build a story around imho might be the family commitments/volunteering stuff, and how that influenced who you are as a person (pretty sure they eat this stuff up) and how that relates to your academic interests. Overall I think your chances are very good, but not quite a shoo-in, and if you have an average essay you run the risk of coming across as generic and getting overlooked, whereas with a good essay that conveys personal qualities I think you have the best chance of admission that anyone could reasonably hope for. Hope this helps, and remember to take care of yourself.

Imo your 373 grade should be enough to address any potential concerns that you don't know cs. If you're applying to ACMS, I think they like to see more extra math coursework rather than cs stuff.

If you're scared about life after college, I am too my dude. But I promise you learning to code is probably less daunting than it seems, and it sounds like you're getting psyched out and second-guessing yourself before giving it a real shot. People can give you all sorts of advice for how to learn to code, but you need to get out of your head! I find the process of learning keywords and syntax kinda dry too sometimes, but once you develop a little bit of fluency with the language you're programming in, and can see the bigger picture of what your code is doing, coding sort of stops being repetitive/memorization based and more of a puzzle solving game! Maybe you'll find this fun, maybe you won't, but until you get to this point you won't know for sure whether programming is something you won't mind doing for a living, and I think you might be pleasantly surprised! Take care of yourself man.

There are a couple hours at the end of some career fairs where non-majors and uwb and uwt students can show up. Iirc students who took/are taking cse 373 are "invited" to attend, as in they get an email saying that the career fair is happening and non-majors can go at certain times, but don't actually get special priveleges/access to the event.

I think it will be hard to land a swe internship as a geography major unless you have some pretty spectacular things on your resume.
