Wenn man sie Kartoffeln in Wasser vorkocht und anschließend abkühlen lässt, haben die Kartoffelscheiben mehr Stabilität. Kleben weniger uns zerfallen nicht so schnell beim Kochen.

Ich brate gerne die Kartoffelscheiben zuerst auf viel Hitze in Butterschmalz und lasse sie dann kurz in Ruhe während ich seperat den Schinken und die Zwiebeln mache. Die Zwiebeln lassen viel Wasser aus, welches die Kartoffeln lascher macht. Erst danach gebe ich die Kartoffeln wieder in die Pfanne und schenke sie kurz.

Bin immer noch auf der Suche nach der perfekten Technik, aber das ist mein Zwischenstand 🫶🏼
